Lately I’ve been getting into the habit of making a nice dressing to have on hand so that at any given moment there’s a flavorful nutrient dense sauce to add a juicy spark to any snack or meal. One of the biggest pluses to this practice is that my son loves flavorful food (perhaps a slight influence from his Momma), and a bit of a tasty dressing has him eating more fresh veggies than ever.
Ready for a nice salad and having just ran out of my sweet and sour red bell pepper dressing I grabbed what was around, and fitted my desire for tart and creamy. A little celery for added nutrients, some garlic, a lot of lemon juice, olive oil, salt, pepper, zaatar and a few almonds to cream it up and voila my salad was dressed. The first salad I made was good, but the BEST was when I poured a bunch of this dressing over some broccoli florets with a sheet of nori torn. After tossing it all together, I took a bite and fell in LOVE!
Since then it has been used as a dip, a spread and a dressing for salads, steamed veggies, steamed quinoa etc. Try it out for a versatile and delicious sauce.As always, please let me know what you think. I would love to hear from you!
Creamy Zaatar Dressing

- ½ cup chopped celery with leaves
- 1 rounded Tbs. roughly chopped garlic
- 3 Tbs. lemon juice
- ½ cup olive oil
- 1 tsp. high mineral salt
- 1 Tbs. crispy almonds, I peeled mine before drying them
- 1 Tbs Zaatar, you can find this spice blend in any mediterranean market as well as many health food and specialty food stores.
- ¼ tsp. cumin powder
- black pepper to taste
- Water, add later
Blend all ingredients until creamy, and then add some water to thin to desired consistency.
Enjoy on a salad, steamed veggies or as I have here over a bowl full of broccoli florets and a torn sheet of nori.
