Is it 2011 already??? 2010 just flew right on by. It was a very productive year, at least it was in the sense that I produced a child!!!! He is 7 months old, I have been eating mostly cooked foods since I became pregnant and feel the call to enter into a raw and juicy experience again. What better time then the beginning of the new year? Also, my son is just entering the world of solid foods, he’s still mostly nursing but as I begin to introduce “our” food it is my desire to have him tasting the most vibrant food for his well being – even more motivation! In the past when I was eating mostly raw foods I had the challenge of preparing cooked food for my husband and raw food for myself. This time around (at least to start) my husband has actually shown interest/willingness to try on raw foods for a few weeks…this from a man who really does NOT have a love affair with veggies. I know if he gives it a shot not only will he love how he feels, but perhaps he will find that veggies are actually kinda good! One fun note with having my husband join me is that he doesn’t like veggies….which means; in order for him to somewhat and hopefully more than somewhat enjoy the foods I make for us I will get to get really creative and play with more of the savory gourmet here at home. If it were just me I tend to stick to salads, pates, and perhaps some crackers and kale chips. Well now I will be playing with breakfast, lunch and dinner for a soy-meat and potatoes lovin’ type……pancakes, sandwiches, burgers, neat balls, pizza’s etc. I will definitely be updating with any new top notch recipes!
Since I started working again there have been a number of projects I have been working on. One of them is a video series for an up and coming raw, vegan, and vegetarian online business guide and more….The website is http://www.newworldveg.com and they will have 3 chefs teaching weekly vegetarian, vegan and raw food prep classes. I am the raw food chef and have been pre taping the first set of classes. It’s a great way to throw myself right back into the raw foods bandwagon. I have tons of goodies to choose from and even too much, which means I get to get creative with my dehydrator. Last week I was taping a series called Soups D’Jour. One of the soups didn’t come out quite right for some reason and I had a number of others to eat up anyhow. So I decided to try this soup out as a base for flax crackers….ding, ding, ding…..WINNER!!!! These crackers are SO good, I may like them even better than the soup, plus hubby tried and he liked….BIG SCORE! Want the recipe???? Okay….pull my leg…here it is:
Fresh Tomato Fennel Soup or Tomato Fennel Flax Crackers!
Serves 4-6
5 Cups Chunked Sweet Tomatoes
1 med. Head Fennel Chopped
¼ Cup Olive Oil
1 Clove Garlic
Raw Sea Salt & Pepper to taste
Simply Place all ingredients into your high speed blender and blend until smooth and creamy.
Store refrigerated for up to 4 days. Or……..turn them into flax crackers:
Mix in half the amount of liquid in golden flax seeds. So if you have 5 cups of soup mix in 2 1/2 cups of golden flax seeds. Allow them to soak overnight in the fridge. Using a teflex lined dehydrator tray pour 3 cups of the filling on one tray and the remaining batter on a second. Spread across the sheets and score into desired number of crackers. Dehydrate at 115 6-8 hours or until dry enough to flip. Flip onto a tray with the mesh screen and gently remove the teflex sheet. Continue to dehytrate 8-10 hours or until crispy.
Store in an airtight container for up to a week or in your fridge until they’re all eaten up!
Seriously, try this – it is a WINNER!

It looks like Valentine’s Day is already on the radar and I have many new recipes a brewin’ for this coming season of love….be on the lookout, I haven’t updated the calendar in a while but that will be happening soon.
